Malbec Market was a fixture at 1632 Colorado Boulevard for a decade, and when it closed, the space could have gone in any number of directions. Carnivorous Creations took it and built something focused and deliberate: premium burgers, choris, and bowls made without seed oils, cooked in beef tallow and butter, with ingredients sourced for quality rather than convenience. The burgers are well-built and seasoned properly, the protein bowls are filling without being heavy, and the choris dishes have a depth of flavor that you notice even when you are not specifically looking for it. The name suggests something more theatrical than the reality, which is a clean, straightforward operation that takes cooking seriously and lets the ingredients do the work. It is the kind of spot that fills a real gap in the Eagle Rock food landscape, where serious casual cooking at reasonable prices is harder to find than you would expect from a neighborhood with this much dining activity.
