Malbec Market was a fixture at 1632 Colorado Boulevard for a decade, and when it closed, the space could have gone in any number of directions. Carnivorous Creations took it and built something focused and deliberate: premium burgers, choris, and bowls made without seed oils, cooked in beef tallow and butter, with ingredients sourced for quality rather than convenience.
