Five years as a pop-up is a long time to test a concept before committing to a space, and Yellow Paper used that time well. The permanent counter on Colorado Boulevard opened in January 2025 and brought the same burger that made the pop-up worth chasing into a format you can actually plan around. The double smashburger is the right order. Two thin patties pressed hard against a flat top, crisped edges, American cheese melted properly through both layers, a toasted bun that holds without going soggy, and the chopped yellow chiles that give it the heat that distinguishes it from every other smashburger in the neighborhood. The apple hand pies are made in-house from scratch and sell out before closing most days. The patio out back handles a crowd and is dog-friendly and family-friendly in equal measure. The staff is friendly, and the operation moves quickly even when it is packed. Wednesday through Sunday, noon to 8:30 pm. Get there early if you want the hand pie.
